Nestled in the folds of the Groenland Mountains in the Elgin Valley, the magnificent De Rust Estate is home to Fresh at Paul Cluver. The restaurant has an intimate connection with its environment and part of the very special ambience is created by its being part of the everyday hustle and bustle of a working farm.
The menu is a black-board affair and changes frequently, focusing on what is seasonal, fresh and, as far as possible, locally available. Many of the “signature dishes” are based on ingredients that grow in abundance in the vegetable garden – amongst many other things artichokes, figs, lemons, tomatoes, pomegranates, pears and apples.
Our philosophy and vision is very simple – we strive to offer a warm, uncomplicated and unforgettable dining experience. In the summer, tables are dressed under the trees on the magnificent lawns, in the winter the interior space is warmed by a roaring fire. Our huge, communal tables encourage an openness and sense of sharing and relaxation - we love the sound of children playing, of laughter and conversation. The greatest compliments we can be offered are clean plates going back to the kitchen and guests who feel like they have been “home-from-home”.
